Ingredients

  • 1 pound Chicken of the Wood mushrooms fresh
  • 3 cloves garlic minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 2 tbsp fresh parsley chopped (optional)
  • ¼ cup white wine or chicken broth (optional)
  • lemon juice or soy sauce (optional)

Instructions

  • Clean the mushroom: Start by cleaning the mushrooms by gently brushing off any dirt or debris using a mushroom brush or a damp paper towel. Remove the stem and cut any large mushrooms into smaller pieces, about 1/4 to 1/2 inch thick.
  • Melt the olive oil: Heat a large skillet over medium heat and add the butter and olive oil. Let it melt and get hot.
  • Add garlic: Add the minced garlic and sauté for about 30 seconds, until fragrant. Be careful not to burn the garlic as it will become bitter.
  • Add the mushrooms and season: Add the mushrooms to the skillet and season with salt and pepper, stir well to coat the mushrooms with the butter and oil.
  • Allow to cook: Cook the mushrooms for about 5-7 minutes, or until they are tender and have released their liquid, stirring occasionally. The mushrooms will shrink and release liquid as they cook.
  • Add the chopped parsley: If desired, add the chopped parsley and cook for an additional minute.
  • Turn off the heat: Once the mushrooms are cooked, turn off the heat and serve them hot as a side dish or topping for pasta or steak.
  • Deglaze the skillet (optional): As an option, you can deglaze the skillet with 1/4 cup of white wine or chicken broth, stir well and let it cook for a minute to create a flavorful sauce.
  • Add lemon juice, or soy sauce (optional): Alternatively, you can add a splash of lemon juice or soy sauce to the skillet during the last minute of cooking for added acidity and flavor.
