Ingredients

  • 2 pound sablefish fillets
  • 2 tbsp white miso paste
  • 2 tbsp unsalted butter
  • 2 tbsp sake (Japanese rice wine)
  • 1 tbsp mirin (sweet Japanese rice wine)
  • 2 tbsp sugar
  • 2 cloves garlic minced
  • 1 green onion thinly sliced
  • 1 tbsp sesame seeds toasted

Instructions

  • Make the marinade: In a small bowl, combine the soy sauce, sake, mirin, sugar, garlic, and ginger. Mix the ingredients well to fully combine the flavors.
  • Marinate the sablefish: Place the sablefish fillets in a shallow dish or a large resealable bag. Pour the marinade over the top of the sablefish, making sure that it is evenly coated. Cover the dish or seal the bag and marinate the sablefish in the refrigerator for at least 2 hours or up to 24 hours. The longer you marinate the sablefish, the more flavorful it will become.
  • Preheat the grill: Remove the sablefish from the refrigerator about 30 minutes before you are ready to grill it. Preheat your grill to medium-high heat. If you are using a gas grill, preheat it to about 375-400 degrees Fahrenheit. If you are using a charcoal grill, let the coals burn until they are covered in white ash before grilling.
  • Grill the sablefish: Remove the sablefish from the marinade and discard the excess marinade. Place the sablefish fillets on the grill, skin side down. Grill the sablefish for 6-8 minutes per side, or until it is cooked through and flakes easily with a fork. If you are using a gas grill, you may need to adjust the heat as needed to ensure that the sablefish cooks evenly. If you are using a charcoal grill, you may need to rotate the sablefish to ensure that it cooks evenly.
  • Serve the sablefish: Once the sablefish is cooked through, remove it from the grill and serve it hot.
