Enchilada Casserole

This recipe is so delicious and can be adapted to any filling you like! This recipe is for chicken, but mushroom and spinach, beans and rice, and even crabmeat are delicious fillings, too!


  • 2 chicken breasts, shredded
  • 1 can diced tomatoes with green chilis
  • 1 large can enchilada sauce (I love Roberto’s – if you live in Colorado you HAVE to try it!!)
  • 12 small corn tortillas
  • 2 cups shredded sharp cheddar cheese

  1. I’m not sure if it was the corn tortillas or not, but this had a little taste to it that I didn’t care for. It was simple to do and might be better with flour tortillas.
