Cheesy Potato Casserole (Funeral Potatoes)

This recipe gets the name Funeral Potatoes from being served at almost always every funeral luncheon because they are easy to make, and can easily serve a crowd.


1 (32 ounce) package frozen shredded potatoes, thawed OR 4 lbs potatoes, cooked and shredded

2 (10 ounce) cans cream of chicken (or mushroom) soup

1 cup sour cream

2 1/2 cups cheddar cheese

2 tablespoons butter, melted

salt and pepper
1 1/2 cups corn flakes
2 tablespoons melted butter
