Hot Potato Chip Chicken Salad Casserole

Served warm and it’s topped with salty potato chip crumbs for a fun, non-traditional topping.

Ingredients:

  • 2 cups cooked rostisserie chicken, rouchly chopped
  • 1 cup diced celery
  • 1/4 cup finely diced red onion
  • 1/2 cup slivered almonds
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp fresh lemon juice
  • 1 cup mayonnaise
  • 1 cup grated sharp Cheddar
  • 2/3 cup crushed potato chips
