Cabbage Roll Casserole

No one slaps high fives when they hear Cabbage Roll Casserole is for dinner, but this casserole smells amazing and tastes delicious!

Ingredients:

  • 1 pound lean ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/4 teaspoon ground thyme
  • 1 teaspoon dried oregano
  • 3/4 teaspoon kosher salt
  • a few grinds of black pepper
  • 1/4 teaspoon caraway seeds, optional
  • 1 cup brown rice, uncooked (use white rice if following 30-minute instructions)
  • 14 ounces petite diced tomatoes, undrained
  • 8 ounces tomato sauce
  • 2 cups beef broth
  • 12 ounces shredded cabbage, bagged coleslaw mix with carrots and cabbage works great
  • 1 cup mozzarella cheese
  • 1/4 cup Parmesan cheese, grated
